Which TR19 frequency band restaurants fall into
TR19 Grease is the BESA specification for kitchen extract, and it sets minimum cleaning intervals by daily cooking hours. Heavy use of 12 to 16 hours a day means a clean every three months, moderate use of 6 to 12 hours means every six months, and light use of 2 to 6 hours means every twelve months. Scottish fire law, insurance and your FHIS result
The Fire (Scotland) Act 2005 and the Fire Safety (Scotland) Regulations 2006 require the duty holder to assess fire risk and act on the findings, and the Scottish Fire and Rescue Service (SFRS) enforces those duties for most premises. Scottish Government guidance for non-residential premises says grease and fat deposits should be removed from kitchen equipment, including extraction equipment. If the restaurant is licensed, SFRS says the significant findings of the fire risk assessment must be recorded and kept available for inspection. BESA notes that many insurers ask for TR19 cleaning certificates and reports at renewal, and that a claim can be refused when a fire is traced back to poor maintenance.
Your Food Hygiene Information Scheme result is separate. A council food safety officer inspects, and the outcome is Pass or Improvement Required. The TR19 certificate is the evidence for the fire side.
What a full clean covers
A TR19 clean goes well beyond the filters. The provider cleans the canopy and filters, the full ductwork run from canopy to discharge and the extract fan. Where a section cannot otherwise be reached, access panels are fitted, and BESA says TR19 expects them typically every 2 to 3 metres wherever possible. Grease-depth readings are taken before and after. TR19 Grease sets a mean of 200 microns as the limit between cleans, with an immediate spot clean wherever deposits reach 500 microns. Scheduling around service and the festivals
Cleans can be booked after close or before opening, so you lose no covers. In the city centre the calendar matters.
